Ingredients

  • 1 (6 oz.) box strawberry jello
  • ¾ tsp. gelatin
  • 1 T. water
  • ¾ C. coconut milk
  • 2 ½ T. sugar
  • 1 tsp. lemon juice

Directions

Prepare strawberry jello according to package directions, pour into molds, and chill until firm. In a small bowl, pour gelatin over water and set aside for a few minutes. In a saucepan, combine coconut milk, sugar, and lemon juice; bring to a simmer, remove from heat, and stir in gelatin mixture until granules dissolve. Let cool slightly and pour mixture over set up strawberry layer. Chill for at least an hour to set up and serve.
