Chilly Cucumber Soup
Ingredients
- 1/4 C. butter
- 3 cucumbers, peeled, seeded and sliced
- 1/4 C. green onions, chopped
- 11/2 C. chicken broth
- 1 C. plain yogurt
- Salt and pepper to taste
- Sour cream
- Fresh dill
Directions
Melt butter in a skillet. Add cucumbers and green onions and sauté for several seconds. Remove from heat and place in a food processor. Add chicken broth, yogurt, salt and pepper. Blend until smooth. Chill for several hours. Serve chilled with fresh dill and sour cream garnish.
The skinny: Use low fat or fat-free chicken broth, yogurt and sour cream.
