Chilly Pizza Roll

This is ideal for kids (and adults, too) who love cold pizza as a snack. It also can be served warm.

Ingredients

  • Nonstick cooking spray
  • Cornmeal, optional
  • 1 package (10 oz.) refrigerated pizza dough
  • 3 1/2 oz. sliced Canadian bacon
  • 1/3 C. pizza sauce
  • 3 pieces (1 oz. each) string cheese, cut in half crosswise

Directions

Preheat the oven to 400 degrees. Lightly coat a baking sheet with cooking spray and, if desired, lightly sprinkle it with cornmeal. Set aside. On a lightly floured, clean work surface, unroll the pizza dough. Press the dough to form a 13 1/2-by-9-inch rectangle. Cut it into six 4 1/2-inch squares. Place the Canadian bacon in the center of each square. Top with pizza sauce and string cheese. Bring up two opposite edges and pinch to seal. Then pinch the side edges to seal. Place the rolls seam side down on the prepared baking sheet. Bake for 12 to 18 minutes or until they are golden brown. Remove to a wire rack; cool. Wrap each sandwich in plastic wrap; chill for 4 to 24 hours. Serve as a snack or as a cold sandwich for lunch.
