  • 1 lb. spare ribs
  • 3 cloves garlic, crushed
  • 1/2 tsp. ginger, finely grated
  • 1 tsp. salt
  • 1 Tbs. soya sauce
  • 1 Tbs. honey
  • 1 Tbs. Chinese wine
  • 1/2 tsp. 5 spice powder

Preheat oven to 400 degrees F. Remove rind and trim fat from the spare ribs. Combine all ingredients in a large bowl. Add ribs and coast well. Half fill a roasting tin with boiling water and place a wire rack across the tin. Roast for 30 minutes. Turn ribs over and brush with remaining marinade and cook for 15 more minutes.
