Chinese Cabbage Salad

Ingredients

  • 1 med. cabbage, shredded
  • 1 bunch green onion, sliced thin
  • 3/4 C. peas, frozen
  • 1/2 C. almonds, sliced and salted
  • 1/8 C. sesame seed, salted
  • 1/2 C. sunflower seed, salted and shelled
  • 3 lg. eggs, hard boiled, chopped
  • 1 lg. tomato, chopped (optional)
  • 2 lg. chicken breast halves, boneless and skinless, cooked and diced
  • 1 C. mushrooms, sliced
  • 1 1/2 C. bean sprouts
  • 1 pkg. ramen noodles
  • Dressing:
  • 2 Tbs. sugar
  • 1/2 C. oil
  • 1 pkg. seasoning from chicken ramen pkg.
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 C. vinegar (more to taste)

Directions

Toss all salad ingredients (excluding ramen noodles temporarily) together and chill until serving. Mix all dressing ingredients together. Just before serving, add ramen noodles atop salad. Then, add dressing.
