Chinese Chicken Casserole

Ingredients
- 3 lb. chicken breast, cubed
- 4 oz. slivered almonds
- 1/2 C. celery, chopped
- 1/4 C. onion, chopped
- 1 C. mayonnaise
- 1 Tbs. lemon juice
- one 10 3/4-oz. can cream of mushroom soup
- 1 1/4 C. chicken broth
- 6 oz. chow mein noodles, divided
Directions
Preheat oven to 350 degrees. Mix together all ingredients with three-quarters of the chow mein noodles. Pour into a 9x13 inch greased baking dish. Top with remaining noodles. Bake 45-60 minutes, or until chicken is completely cooked and juices have evaporated.
Serve with: Fresh Green Salad with Balsamic Vinaigrette
