Chinese Chicken Casserole

A unique dish that can serve up to 8 people! Make it for a crowd and watch it disappear!

  • 3 lb. chicken breast, cubed
  • 4 oz. slivered almonds
  • 1/2 C. celery, chopped
  • 1/4 C. onion, chopped
  • 1 C. mayonnaise
  • 1 Tbs. lemon juice
  • one 10 3/4-oz. can cream of mushroom soup
  • 1 1/4 C. chicken broth
  • 6 oz. chow mein noodles, divided

Preheat oven to 350 degrees.  Mix together all ingredients with three-quarters of the chow mein noodles. Pour into a 9x13 inch greased baking dish.  Top with remaining noodles.  Bake 45-60 minutes, or until chicken is completely cooked and juices have evaporated.

Serve with: Fresh Green Salad with Balsamic Vinaigrette
