My family always loved meat loaf night; this is a recipe we came up with to make an old favorite new and exciting. Chinese meat loaf has a unique oriental flavor and will have you going back for a second helping.

1 meat loaf


  • 1 1/2 lb. ground beef
  • 1/2 C. bread crumbs
  • 2 eggs beaten
  • 1/2 C. chopped onions
  • 1/2 C. chopped green peppers
  • 1/3 C. water chestnuts
  • 5 Tbs. ketchup
  • 3 Tbs. soy sauce
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbs. brown sugar
  • 1/2 tsp. dry mustard

Combine beef with bread crumbs, eggs, salt, and pepper. Mix onions, green peppers, water chestnuts, 3 tablespoons ketchup, and 2 tablespoons soy sauce, then stir into beef mixture and shape into loaf in baking pan. Combine 2 tablespoons ketchup, 1 tablespoon soy sauce, brown sugar, and mustard. Spoon mixture over meat loaf and bake for 1 hour at 350 degrees.
