Chinese Peanut Chicken and Vegetables
Ingredients
- 3 C. cooked chicken, cut into bite-sized pieces
- 1/3 C. teriyaki sauce
- 1/3 C. creamy salted peanut butter
- 1 Tbs. toasted sesame oil
- 1/3 C. water
- 1/2 of a yellow bell pepper, cut into strips
- 1/2 of a red bell pepper, cut into strips
- 1 C. snow peas
- 2 green onions, chopped
- 1/2 C. cashews
Directions
Whisk teriyaki sauce, peanut butter, and sesame oil until blended. Add water and mix well. Place chicken, vegetables, and cashews in a large bowl, add peanut sauce, and stir to coat evenly.
