  • 1 (15 oz) can red kidney beans, rinsed and drained
  • 1 chipotle in adobo, chopped
  • 1 tbs. adobo sauce
  • 4 slices whole-grain bread
  • 1 rip avocado, pitted and sliced
  • 4 radishes, sliced
  • 4 escarole leaves
  • 1 C. bean sprouts
  • 1/8 tsp. kosher salt
  • 1/8 tsp. freshly ground black pepper

In a large mixing bowl, mash beans until smooth. Stir in chipotle and adobo sauce. Mix until ingredients are well blended.

Spread mixture on two slices of bread and top with avocado, radishes, escarole and sprouts. Sprinkle with salt and ground pepper. Top with remaining slices to make a sandwich and serve.
