  • 1 lb. boneless, skinless chicken breasts, sliced
  • 8 corn tortillas
  • 1 large red onion, sliced1 green pepper, seeded and sliced
  • 4 cloves garlic, minced
  • Juice from 1 lime
  • 1 tsp. lime zest
  • 1 small jalapeno pepper, seeded and minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbs. ground cumin
  • 1/2 Tbs. ground chili chipotle
  • 1/2 C. salsa
  • 1/3 C. fresh cilantro, chopped

Preheat the oven to 300 degrees. Wrap the tortillas in foil and bake for 10 to 15 minutes. Season the chicken with salt, pepper, and cumin. Grease a skillet and heat over high heat. Add the chicken and cook until browned on all sides, about 6 minutes. Transfer to a bowl and cover with lime juice.

Grease the skillet again and cook the onion for 3 to 5 minutes. Add the bell pepper, lime zest, garlic, jalapeno, and chili chipotle Cook for 2 to 3 minutes, or until the peppers are green but still crisp. Stir in the salsa and chicken. Cook, stirring, until the chicken is cooked through, about 2 minutes. Spoon the meat into warmed tortillas.
