Chipotle Pinto Beans

Ingredients
- 1 lb. pinto beans
- 1 small onion, sliced
- 4 cloves of garlic
- 1/2 bunch of cilantro, chopped
- 1 jalapeƱo pepper, chopped
- 1 tsp. salt
- 2 tsp. ground black pepper
Directions
Clean beans and rinse under running water. In large pot, cover beans with about an inch of water and bring to full boil. Boil 1 minute. Remove from heat and let beans sit for about one hour. Drain beans.
Add all ingredients to pot and cover with 2 hours of water. Cook on low for about 4 hours and occasionally adding more water when necessary (to keep it at 2 inches). When beans are tender, drain any excess water. If you desire, serve in a tomato sauce.
