  • 1 T. vegetable oil
  • ¾ C. salsa
  • 1 chipotle chili (soaked in adobe sauce), finely diced
  • 1 (14 oz.) can pinto beans, drained and rinsed
  • ¾ C. water
  • 2 C. rotisserie chicken, shredded
  • ¼ C. cilantro
  • Salt and pepper to taster
  • Tortillas
  • 1 C. white rice, cooked
  • 1 C. Monterey jack cheese, shredded
  • Romaine lettuce, shredded
  • Avocado, sliced
  • Roma tomato, diced

In a large skillet, combine salsa, chili pepper, and extra adobe sauce from the can if desired. Once sauce begins to simmer, add in pinto beans and water, bring to a boil, add chicken, and cook until sauce begins to thicken. Stir in cilantro, salt, and pepper. Assemble heated tortillas with rice, chicken mixture, cheese, lettuce, avocado, Roma tomatoes, and any other toppings!
