  • 3 cups Water
  • 1 tsp Salt
  • 1½ lbs Russet Potatoes, peeled and cut into large chunks
  • 3 Tbsp Cream
  • 3 Tbsp Unsalted Butter
  • 2 Tbsp sour cream
  • Salt, to taste
  • pepper, to taste
  • 1 C. chives, chopped (for garnish)

Boil salted water and add the potatoes. Simmer for 25 minutes, or until they are completely tender when pierced with a fork. Drain and return to pan (off of heat). Use a potato masher or hand mixer to beat until smooth. Add cream, butter, and sour cream. Season to taste and garnish with fresh chives.
