Pancakes were one of my favorite foods growing up, especially the chocolate chip ones. As an adult, I strive to be even more insane in my food choices, so I thought why not get some chocolate maple syrup in the mix, too! Don't eat this every day, and I take no responsibility for anything that happens if you do.

Ingredients

  • 1 1/2 C. maple syrup
  • 3 Tbs. cocoa powder
  • 1/2 stick unsalted butter, room temperature
  • 1 1/4 C. flour
  • 1 Tbs. sugar
  • 1/4 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 2 eggs
  • 1 C. milk
  • 4 Tbs. butter, melted
  • 3/4 tsp. vanilla
  • 1 C. chocolate chips

Directions

Beat the first three ingredients in a bowl until well combined. If you're having a hard time, use 10 second blasts in the microwave to speed up the process. Set aside. 

Preheat the griddle over medium heat. 

In a bowl, mix the wet ingredients and the dry separately then slowly combine until it forms a batter. 

Gently fold in the chocolate chips, and fry until one side begins to bubble. Flip and cook the other side. 

Top with the chocolate maple syrup.
