Chocolate Chip Cookie Ice Cream Cake

This dessert is for people who like their cake and ice cream too.

Ingredients

  • 1 18 oz. pkg. small chocolate chip cookies
  • 1/4 C. margarine, melted
  • 1 C. hot fudge topping
  • 2 qt. ice cream
  • 1 C. whipped cream
  • 12 maraschino cherries

Directions

Crush half the cookies (about 20) to make crumbs. Combine crumbs with melted margarine, and press into the bottom of a 9-inch Springform pan or pie plate. Stand remaining cookies around edge of pan. Spread 3/4 cup fudge topping over crust. Freeze 15 minutes. Meanwhile, soften 1 quart of ice cream in microwave or on countertop. After crust has chilled, spread softened ice cream over fudge layer. Freeze for 30 minutes. Scoop remaining quart of ice cream into balls and arrange over spread ice cream layer. Freeze until firm, 4 hours or overnight. To serve, garnish with remainder of fudge topping, whipped cream and cherries.

  • I have used this recipe over cake, too. Just bake a regular cake mix according to directions in a 13X9 pan and cool. We put cookie crumbs in between the cake and ice cream instead of hot fudge topping (although the topping sounds good, too!) As far as garnishing, I spread the ice cream and freeze a few hours until it has set again. Then, I spread a layer of cool whip and freeze. This gives a nice, even and smooth finish so I can write something or decorate. Sometimes I'll pipe the cool whip for the puffy effect - it freezes and tastes great. Hope that helps!

  • I have used this basic recipe for years with a combination of ice creams and cookies. As a matter of fact, it is my standard birthday cake. It is always beautiful, and people just love it..

  • I haven't tried it, but the directions sounds easy and NO BAKING on a hot day. I think that people would love it even as a birthday cake. I will definetly keep it in mind

  • The ''garnish'' instructions with ''ice cream balls, remaining fudge topping, whipped cream and cherrire" sure do not sound like they will make a cake looking like this picture, but I am buying these ingredients and giving it a whirl..... will rate this afternoon
