Ingredients

  • 1 C. butter
  • 3/4 C. packed brown sugar
  • 1/4 C. sugar
  • 1 tsp. vanilla extract
  • 1 (3.4-oz.) instant vanilla pudding mix
  • 2 eggs
  • 2 1/4 C. flour
  • 1 tsp. baking soda
  • 4 C. semisweet chocolate chips

Preheat oven at 375 degrees F. In a large mixing bowl, stir in butter, sugars, vanilla and pudding mix. Beat until smooth and creamy. Add eggs. Combine flour and baking soda. While stirring, pour in pudding mixture. Fold in 2 C. chocolate chips. Use a spoon to drop teaspoon-sized dough balls on greased cookie sheets. Bake for 9 to 12 minutes. For chocolate bottom, melt remaining chocolate in microwave when cookies are cool. Dip each cookie bottom in the chocolate and place on wax sheet. Store cookies in fridge until chocolate is firm.
