Chocolate Chip Crunchy Cookies

A normal tasting chocolate chip cookie with a crunch. My kids love this recipe and I make it all the time. Its a variation on an old favorite.

Ingredients

  • 1 C. butter, melted
  • 1 C. sugar
  • 1 C. brown sugar
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. vanilla
  • 2 eggs, beaten
  • 2 1/2 C. all-purpose flour
  • 2 C. crushed corn flakes (you can just crush them with your hands)
  • 1-2 C. semi sweet chocolate chips

Directions

Preheat oven to 375 degrees. Mix butter, sugar, brown sugar, and vanilla in one bowl, then mix in eggs. In a separate bowl, mix flour, salt, baking soda, and corn flakes. Mix both bowls together, then add chocolate chips. Roll cookie dough into walnut-sized balls and place on cookie sheet. Take a fork and squish the dough balls like you would a peanut butter cookie, making a crosshatch pattern. Bake approximately 10 minutes or until edges are golden brown. Remove from cookie sheet immediately. Place on wire rack to cool so that they stay crunchy. Enjoy!
