Chocolate Chip Pancakes

These delicious chocolate chip pancakes are made with mostly low-fat ingredients!

  • 2 1/2 C. King Arthur unbleached whole wheat flour
  • 1 Tbs. sugar
  • 2 Tbs. baking powder
  • 3 dashes sea salt
  • 2 C. low-fat milk
  • 2 Tbs. organic apple cider vinegar
  • 1 Tbs. unsalted melted butter
  • 1 tsp. vanilla
  • 2 egg beaters
  • 6 oz. semi-sweet chocolate morsels

Mix the first four ingredients together. Add milk, butter, vanilla. Mix well in the mixer and add the eggs and morsels.

Drop by a large serving spoon into skillet. Do not make the pancakes too big or the chocolate will be messy. They should be an average palm size. As the batter bubbles, flip the pancake. Serve with strawberries and whipped cream.
