  • 2 1/2 cups sliced fresh strawberries
  • 1 sliced banana
  • 2 tablespoons honey
  • 2/3 cup flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup mashed banana
  • 1 egg, beaten slightly
  • 1 tablespoon vegetable oil
  • 1/4 cup miniature semisweet chocolate chips

Combine strawberries sliced banana and honey in a medium bowl and let stand at room temperature. Combine flour, sugar, and baking powder in a small bowl and set aside. Combine buttermilk, mashed banana, egg and oil in another medium bowl and let stand for 5 minutes. Add flour to mixture and stir in chocolate chips. Spray griddle or skillet with cooking spray and pour 1/4 cup of batter onto a circle about 4 inches wide. Cook over medium heat for about 2 minutes or until bubbles form on top. Turn pancakes, and continue cooking for 2-3 minutes more. Serve with strawberry-banana mixture.
