Chocolate Chip Shortbread

Shortbread is one of the easiest cookies to make and while it's delicious on its own, chocolate chips make it even better!

Ingredients

  • 1 C. butter (do not use margarine)
  • 1/2 C. brown sugar, packed
  • 1 tsp. pure vanilla extract
  • 2 C. all-purpose flour
  • 2 C. semisweet chocolate chips

Directions

Preheat oven to 325 degrees. Measure the butter, sugar, vanilla and flour into large bowl. Work this all together until it forms a ball. (I use my hands.) Add the chocolate chips. Work well into dough. Roll into balls, about 1 inch in diameter. Place on ungreased cookie sheets. Press down with a lightly floured fork. Bake in a preheated oven for 10-15 minutes. These cookies freeze well.

Yield: 5 dozen cookies
