Chocolate Drizzled Vanilla Peach Crepes

- 1 1/4 C milk
- 1 C all-purpose flour
- 2 large eggs
- 3 Tbs. salted butter, melted
- 12 oz. cream cheese
- 1 C heavy cream
- 3/4 tsp. vanilla extract
- 1/2 C powdered sugar
- 5 medium peaches, thinly sliced
- Olive oil, for cooking
- Chocolate syrup, for drizzle
- Additional fruit
In a bowl, combine milk, flour, eggs, and butter until well combined.
Using a mixer, whip heavy cream until stiff peaks form. Mix in cream cheese on medium speed until smooth and fluffy, about 3 minutes. Add in vanilla extract and powdered sugar.
Pour enough olive oil to cover the bottom of a skillet and heat. Pour enough batter to cover the bottom of the skillet. Cook the crepe for about 25 to 40 seconds, or until top of crepe appears dry and edges are lightly golden. Flip and cook the other side until it is golden for about 10 to 20 seconds. Repeat with remaining batter. Add additional olive oil to the skillet if needed.
Fill each crepe with 4 to 5 peach slices and cream. Wrap it up and drizzle with chocolate syrup.
