Chocolate Fruit Cake

Apricots, dates, raisins and apples pack this rich cake with fruity flavor!

Ingredients

  • 200g dried apricots
  • 200g chopped dates
  • 200g sultanas
  • 200g raisins
  • 150g dried apples
  • 1/2 C. brandy
  • 250g chopped butter
  • 1 1/2 C. packed brown sugar
  • 200g chocolate broken (dark chocolate is nice)
  • 4 lightly beaten eggs
  • 1 C. plain flour
  • 1 tsp. baking powder
  • 1 tsp. nutmeg

Directions

Grease and line cake pan. Combine all fruit in a large bowl. Pour over brandy and cover, allow to stand 2-3 hours, overnight is better. Combine soaked fruit butter and brown sugar in a large saucepan. Cook for 10 minutes stirring over medium to low heat until butter has melted.

Lower heat and add chocolate, stir until chocolate has melted. Cool. Preheat oven 150 degrees C

Add eggs one at a time to chocolate mix. Fold in sifted flour, baking powder and nutmeg. Spoon into prepared tin(s) and bake 1 tin 2-2 1/2 hours or 2 for 1 1/2-2 hours. Also approximately 40 minutes for muffin size ones (in papers).
