  • 1 1/2 C. milk
  • 1 C. heavy cream
  • 1 1/2 C. sugar
  • 6 pieces semi-sweet baking chocolate
  • 8 egg yolks
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • 1 Tbs. corn starch
  • 2 prepared pie crusts

In a saucepan, heat 1 C. milk and cream to near simmer. In another pan, heat chocolate and remaining milk to melt the chocolate at a low temperature. Combine sugar, corn starch, egg yolks and salt in a bowl. Using an electric mixer, blend until a light yellow color. Combine heated milk with the chocolate in the other pan and whisk until smooth.

Pour small amounts into the bowl with the egg mixture while gradually and stirring constantly. Slowly add 1/3 of the mixture then pour the rest in to fully combine. Place the saucepan back on the stove and pour the eggs and milk mixture into the saucepan again. Heat the mixture on low heat slowly and stir frequently, allowing it to thicken until it becomes thick and creamy. Pour the mixture into the bowl used originally and allow to cool for 15 minutes, then stir in vanilla extract. Allow to cool completely, then refrigerate for 12 hours. Pour custard mixture into pie shell.
