  • 2 teaspoons dry yeast
  • 1½ cups milk
  • ¼ cups sugar
  • 2 cups flour
  • ½ cup cocoa powder
  • 3 tablespoons butter, chilled
  • 1 egg, lightly beaten
  • 2/3 cup dark or milk chocolate chips
  • 1 tablespoon boiling water
  • topping:
  • ¼ cup flour
  • 2 teaspoons sugar

Place yeast, milk and 1 tablespoon of sugar in a bowl. Whisk together, cover and set aside in a warm place for 10 minutes, or until foamy. Sift 2 cups of flour and cocoa into a bowl. Beat in the butter until breadcrumb lumps form. Add the yeast, egg and sugar and mix well. On a floured surface, knead the dough for 1 minute. Cover and set aside into a lightly oiled bowl, cover and set aside to rise for 1 hour, or until doubled in size. Return to the floured surface and knead an additional 5 minutes. Add the chocolate chips into the dough and continue kneading until well blended. Roll into 16 balls and arrange onto a greased baking pan. Cover the rolls and set aside in a warm place for 30 minutes, or until slightly risen. Preheat the oven to 380°F. IN a bowl, combine the flour and sugar. Add 2½ tablespoons cold water and mix well. Pour into a ziploc bag and cut the corner Pipe the crosses onto the buns and bake for 10 minutes. Reduce the heat to 350°F and bake for an additional 15 minutes, or until golden brown.
