These chocolate lava cupcakes are always a favorite when we serve them for dessert after a large and more elegant meal. Top these with some whipped cream and a light sprinkling of powdered sugar, and it's just fantastic!

  • 1 ½ cups of plain flour
  • ½ cup of cocoa
  • 1 cup of castor sugar
  • 2 tablespoon of baking powder
  • Pinch of salt
  • ½ cup of vegetable oil
  • 3 large eggs
  • 1 cup of milk

Mix in the flour, cocoa, castor sugar, baking powder and salt. Stir thoroughly until the mixture is even.

Add in the eggs, vegetable oil and a half cup of milk. Stir the mixture as the remaining cup of milk is gradually added to it until a smooth runny paste is obtained.

Fill the cups about 2/3 full and bake for 10 minutes at 350 degrees. It should not be completely cooked at the center.

Tap the cupcake pan to ensure the center shrinks and there are no air bubbles.
