Chocolate Lemon Bars
Ingredients
- Crust:
- 1 1/2 C. all purpose flour
- 1/2 C. confectioners’ sugar
- 1/4 C. unsweetened cocoa powder
- 1/4 tsp. salt
- 2 stick (1 C.) cold butter or margarine (not spread), cut in small pieces
- Lemon Topping:
- 4 large eggs
- 2 C. granulated sugar
- 1/3 C. all purpose flour
- 1 Tbs. freshly grated lemon peel
- Decoration: confectioners’ sugar
Directions
Heat oven to 350 degrees. Line a 13x9x2-inch baking pan with foil, letting ends extend above both ends of pan. Grease foil. To make crust, in a food processor, process flour, sugar, cocoa
and salt until blended. With machine running, gradually add butter and process until mixture clumps and leaves side of bowl. Press dough evenly over bottom of prepared pan. Bake 20 minutes, until crust looks dry on top. Remove pan to wire rack to cool.
To make topping, while crust cools, whisk eggs in a large bowl until blended. Whisk in remaining topping ingredients until very well blended. Pour over cooled crust. Bake 25 minutes, or until topping is set and lightly browned around edges. Cool in pan on wire rack. Holding foil, lift to cutting board. Dust with confectioners’ sugar before cutting into bars.
