Who says pudding is just for kids? This dessert combines the rich flavors of chocolate and mascarpone into layer on layer of cool sweetness. Topped with blueberries, this parfait is an easy and delicious way to stay cool this summer.

  • 8 Ounces of Mascarpone Cheese
  • 1 Cup of Heavy Whipping Cream
  • ½ Cup of Powdered Sugar
  • 1 Teaspoon of Vanilla Extract
  • 8 Ounces of Cold Whipped Topping
  • 1 Box of Instant Chocolate Pudding
  • 2 Cups of Blueberries

Prepare chocolate pudding and set in the refrigerator for the time being. Then, combine mascarpone cheese, heavy whipping cream, and vanilla extract into a mixing bowl and use an electric mixer on a low setting to mix them together. Gradually begin to increase the speed to a medium-high setting until the mixture starts to thicken, lowering the speed again to add the powdered sugar.

Raise the speed of the mixer again until stiff peaks can form within the mixture. Slowly decrease the speed once this happens, and fold in the cold whipped topping. Refrigerate this filling for 30 minutes to an hour before using it.

Begin the parfaits by lining cups with a healthy layer of chocolate pudding. Then, add in a layer of the mascarpone mixture before topping off with another layer of pudding. Top with blueberries and serve cold.
