  • 1/2 C. unsalted butter, cut into pieces
  • 6 oz. semi-sweet or bittersweet chocolate, finely chopped
  • 2 T. pomegranate juice
  • 3 large eggs, separated
  • 1/3 C. granulated sugar
  • 1 tsp. pure vanilla extract
  • 1/8 tsp. cream of tartar
  • 1 T. granulated sugar
  • 2/3 C. pomegranate seeds

Preheat your oven to 400°F and grease the inside of four ramekins. Bring a saucepan of water to a simmer and place a heatproof bowl on top of it. Add butter, chocolate, and pomegranate juice to the heatproof bowl, stirring frequently until melted. Remove from heat and set aside. In a large bowl, beat together egg yolks with 1/3-cup of sugar until thick and fluffy. Beat in vanilla. Carefully fold in the melted chocolate mixture. In a separate bowl, beat the egg whites until frothy. Add in the cream of tartar and continue beating until soft peaks form. Gradually add the remaining tablespoon of sugar, whipping until stiff peaks form. Carefully fold the egg white mixture into the chocolate mixture just until incorporated. Evenly distribute the batter into your prepared ramekins. Bake for about 10 minutes, or until the outer edges appear set. Remove from oven and let stand for 10 minutes before sprinkling with pomegranate seeds.
