Chocolate Strawberry Fudgesicles

- 3 C. 1-percent milk
- 1 C. sugar
- ¾ C. unsweetened cocoa powder
- ¼ C. light corn syrup
- ¼ tsp. salt
- 1 tsp. pure vanilla extract
- 1 C. sliced strawberries
- 8 popsicle molds
- 8 popsicle sticks
In a med. Saucepan over low heat combine milk, sugar cocoa powder, corn syrup and salt. Whisk until sugar has dissolved. Remove from heat and stir in vanilla. Let cool.
Place saucepan over a bowl of ice water to cool it to room temperature. Stir.
Add 2 Tbs. of strawberries to popsicle molds. Top molds with chocolate mixture. Freeze for 1 hour. Insert popsicle sticks and continue to freeze for about 24 hours, or until mixture is solid.
To serve, run molds under warm water to release the Chocolate Strawberry Fudgesicles.
