  • 5 ½ ounces chopped chocolate
  • 3 egg yolks
  • ¼ cup granulated sugar
  • ¼ cup honey
  • 1 ½ cup heavy cream
  • 1 cup whipping cream
  • 3 tablespoons cocoa powder
  • 3 ¼ tablespoons tequila
  • ¼ teaspoon vanilla
  • Chocolate sauce

Finely chop the chocolate and melt it in a microwavable bowl for about 45 seconds. In a separate bowl, beat the egg yolks and sugar. In a saucepan, bring the heavy cream, whipping cream, cocoa, and honey to a boil. Add a dash of salt and continue to boil. Whisk the cream mixture into the egg mixture. Put the combined mixture back in the saucepan and stir for 10 minutes over medium heat. Make sure the custard thickens. Then whisk in the tequila, vanilla, and melted chocolate. Freeze the ice cream after processing it in an ice cream machine. Drizzle with chocolate sauce to serve.
