Chocolate Zucchini Brownies

Just in time for all that leftover zucchini you don't know what to do with. These are the best and moistest brownies I have ever had. It is the only recipe I use anymore.

Ingredients

  • 2 C. flour
  • 1 1/4 C. sugar
  • 1 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1/2 C. cocoa
  • 2 tsp. vanilla
  • 1/2 C. chopped nuts
  • 1/2 C. oil
  • 2 C. grated zucchini
  • Icing:
  • 1 square unsweetened chocolate
  • 1 tsp. butter
  • 1 C. sifted confectioners' sugar
  • 2 Tbs. hot water

Directions

Remove seeds from zucchini; peel and grate (or put in food processor). Mix all ingredients. Batter will be thick. Spread in greased 9x13-inch baking dish. Bake at 350 degrees for 35 minutes. Cool, frost and cut in squares.To make icing, melt chocolate and butter together over hot water. Remove from heat. Blend in sugar and water. Beat only until smooth but not stiff.
