Chocolate Zucchini Cake
Ingredients
- 1/2 C. butter or margarine
- 1/2 C. vegetable oil
- 1 1/2 C. granulated sugar
- 2 eggs
- 1/2 C. sour milk
- 2 1/2 C. all purpose flour
- 1/4 C. cocoa
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. vanilla
- 2 C. finely chopped zucchini
Directions
Cream butter, oil, sugar and eggs together until well blended. Sift dry ingredients together and add to creamed mixture alternately with sour milk, beginning and ending with flour mixture. Beat well and add zucchini. Bake at 350 degrees in a greased 13x9x2 inch pan for 30 minutes.
Yield: 12 servings
Variation: Sprinkle top of above cake with 1/2 C. chocolate chips before baking.
