Ingredients

  • 2 C. heavy cream
  • 1 tsp. vanilla extract
  • 4 tsp. cranberry jam
  • ½ C. white sugar
  • 6 egg yolks
  • ½ C. confection sugar
  • ½ C. cocoa powder
  • 1 ½ tsp. vanilla extract
  • 1/8 tsp. salt
  • Topping:
  • Powdered sugar

Directions

Preheat the oven to 375 degrees. In an electric mixer, combine the white sugar, egg yolks, vanilla extract, 1/3 C. cocoa powder and salt. Pour into a flat baking pan covered in parchment paper. Bake for 15 minutes. Meanwhile, mix the heavy cream, confection sugar, ½ C. cocoa and cranberry jam. Remove the cake from the oven. Spread the filling evenly over the cake. Roll the cake. Sprinkle powdered sugar over it. Enjoy!
