  • Cake:
  • 1 T. vanilla extract
  • 1 T. baking soda
  • 1 ½ tsp. salt
  • ½ C. black coffee
  • 1 ½ C. Guinness
  • 1 ¼ C. sour cream
  • 1 ½ C. cocoa powder
  • 4 C. flour
  • 4 C. sugar
  • 4 sticks of butter
  • 4 eggs
  • Icing:
  • 1 lb. semisweet chocolate, chopped
  • 2 C. heavy whipping cream

Preheat the oven to 350 degrees. Line 2 pans with parchment paper and grease the paper with a non-stick cooking spray. In a saucepan, simmer the Guinness, black coffee and butter. Remove from heat. Add in the remaining cake ingredients. Mix well. Pour mixture evenly into the prepared pans. Bake for 40 minutes. Meanwhile, make the icing. In a saucepan, heat up the chopped semisweet chocolate. Remove from heat. Stir in the heavy whipping cream. Remove the cake from the oven and place one onto a cake plate. Place the other on a different plate. Spread the icing over one of the cakes. Place the other cake on top of the iced cake. Spread the remaining frosting over the entire cake. Make sure the finished cake is on the cake plate when done. Serve and enjoy.
