  • 5 leftover baked potatoes, diced
  • 4 eggs, beaten
  • 4 bacon, crispy and crumbled
  • 2 tablespoons of olive oil
  • Salt and pepper, to season
  • 2 cups of shredded cheddar cheese
  • Chopped green onion, for garnish

Preheat the oven at 375F. Lightly grease the baking dish.
Place the diced leftover baked potatoes onto the baking dish. Season potatoes with olive oil, salt and pepper. Bake the potatoes for 10-15 minutes.
While the potatoes are baking, start to cook the bacon. Using a large pan or skillet, cook the bacon until they are crispy. Transfer the crispy bacon onto a paper towel plate to drain the excess oil.
In a large mixing bowl, whisk together the eggs and shredded cheddar cheese. Season the eggs with salt and pepper.
Once the potatoes are baked, let them cool for 5 minutes. Add in the beaten eggs onto the potatoes. Crumble the crispy bacon and place them on top of the eggs. Place them in the oven and bake for another 10-15 minutes or until the eggs are cooked.
Let the dish cool for 5-10 minutes.
