These festive cookies are the perfect cookie to have during the holidays. Christmas just wouldn't be the same without these cheery butter eggnog cinnamon cookies.

  • Cookies:
  • 1 C. butter
  • 1 C. granulated sugar
  • 1 egg
  • 3 Tbs. low-fat milk
  • 1 tsp. vanilla
  • 3 C. flour
  • 1/4 tsp. salt
  • Frosting:
  • 1/4 C. all-purpose flour
  • 1 C. sugar
  • 1 C. eggnog
  • 1/4 tsp. cinnamon
  • 1 C. butter
  • Pinch of salt

To begin making the eggnog frosting, mix sugar and flour in saucepan. Beat in eggnog and nutmeg until smooth. Heat mixture over medium heat while beating until frosting thickens. Cool for at least 30 minutes. Beat butter and salt in large bowl until fluffy. Pour in eggnog mix and beat until creamy and light.

Start baking the cookies by preheat oven to 350 degrees. In large mixer bowl, cream butter and sugar until light and fluffy. Add egg, milk and vanilla. Mix well. Combine flour and salt; add to butter mixture 1 cup at a time, mixing after each addition. Chill dough for 3-4 hours for easier handling. On a floured surface, roll dough to approximately 1/4-inch thickness. Dip cookie cutter in flour before each use. Bake on ungreased cookie sheet 6-7 minutes or until cookies are lightly browned around edges. Cool cookies on rack. When cool, decorate with eggnog cinnamon frosting.
