  • 1/4 C. water
  • 1 C. white sugar
  • 1/4 C. light corn syrup
  • 2 Tbs. butter
  • 2 1/2 C. unsalted hazelnuts, roasted and sliced
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 2 drops vanilla
  • 1 1/2 C. dried cranberries

Place a large pot over medium heat. Stir in water, sugar and syrup until it boils. Use a candy thermometer to cook mixture to 250 degrees. Add butter and hazelnuts. Boil mixture to 300 degrees. Stir in baking, salt and vanilla. Place cranberries on non-stick cooking sheet. Pour mixture over. Let it cool before breaking the brittle into pieces.
