  • 1/2 C. almond flour
  • 2 C. powdered sugar
  • 1 tsp. ground cinnamon
  • 1/4 tsp. nutmeg
  • 5 egg whites
  • 1/3 C. granulated sugar
  • 1/2 tsp. salt
  • 2 tsp. vanilla extract
  • Gingerbread filling:
  • 4 Tbs. butter, unsalted and softened
  • 2 tsp. ginger
  • 1 C. powdered sugar

Preheat oven to 300 degrees. Mix flour, sugar, cinnamon and nutmeg in a large bowl. Add egg whites, granulated sugar and salt. Whip. Add vanilla extract. Mix again. Bake for 12 to 15 minutes or until golden brown. For filling, mix ingredients with electric mixture until smooth. Let cookies cool. Spread filling with half of the cookies and top with remaining cookies.
