  • 4 slices Leftover smoked ham, diced
  • ½ cup of Red pepper, diced
  • ½ cup Orange pepper, diced
  • ½ cup of yellow pepper, diced
  • ½ cup of tomatoes, diced
  • ½ Onion, diced
  • Salt and pepper to season
  • 6 eggs
  • 4 tablespoons of unsalted butter

In a large mixing bowl, whisk the eggs nicely and season with salt and pepper.
Using a large pan or skillet, melt 4 tablespoon of unsalted butter. Add in the diced red pepper, orange pepper, yellow pepper, tomatoes, and onions and cook until they are softened and translucent. Once the vegetables are softened and translucent, add in the diced ham and cook for a good minute.
When the ham and vegetables are nicely cooked through, add in the beaten eggs. Scramble and fold the eggs until the eggs are fully cooked.
