Christmas Prawn Cocktail
Serving Size / Yield
- 1 lb coldwater prawns
- 1/2 small head of iceberg lettuce, shredded
- 4 yellow onions, finely sliced
- 1/2 cucumber, sliced
- 8oz Cocktail sauce
- Cayenne pepper to taste
- Fresh lemon juice
In a large bowl, toss together shredded lettuce, onions and cucumber with a little salt and a squeeze of lemon. Add salad mixture to bottom of serving glasses, filling 2/3 the way.
In a separate bowl, toss prawns with cocktail sauce and allow to sit for several minutes for maximum flavor. Place prawns on top of the lettuce and season with cayenne pepper to taste.
