- 3 C. all-purpose flour
- 2 tsp. baking powder
- 2 tsp. ground cinnamon -- 2 teaspoons
- 2 tsp. round ginger -- 2 teaspoons
- 1/2 tsp. ground nutmeg teaspoon
- 1/2 tsp. salt
- 4 eggs
- 1 C. dark brown sugar
- 1 1/4 C. milk
- 1/2 C. molasses
- 1/2 C. butter
Mix the dry ingredients except sugar in a dry bowl and sieve them together completely
Crack the eggs and beat well with the milk.
Add the sugar to the wet ingredients and beat well again. Then add the molasses and butter and beat well again.
Mix the dry and wet ingredients carefully and then pour into a preheated waffle pan.
You can color the batter green and red as a festive variation. Another option is to skip the spices and serve plain waffles but with special seasonal waffle plates. You can make Christmas tree or Santa-shaped waffles.
