Chuck Roast

Very easy, delicious and makes it's own gravy  - can use crock pot.

  • 2-3 lb. boneless chuck roast
  • 1 pkg. lipton onion soup mix
  • 2 Tbs. oil
  • salt
  • pepper
  • garlic
  • 1 can cream of mushroomsoup (undilluted)
  • 1 C. red burgundy wine
  • 1 can beef broth

Season meat with salt, pepper and garlic on both sides. In a dutch oven (or heavy lg. pot) sear roast in the hot oil on both sides. Add beef broth and onion soup mix and simmer for about 1 hour. Add mushroom soup and wine and cook until tender.

  • try placing roast in heavy aluminum foil, sprinkle with onion soup mix, seal tightly and let cook couple of hours - this makes it's own juice also and you know it is done when the odours go thru the house - yummy - gravy is as simple as stirring flour into a cup of water, place juice from roast into a pot and stir up the gravy.
