  • 1 ½ cup flour
  • ½ cup brown sugar
  • 1 cup applesauce
  • ¼ cup buttermilk
  • 1 egg
  • 5 tablespoons butter
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 ½ teaspoon pumpkin pie spice

Spray the slow cooker with cooking spray and put foil at the bottom of the crockpot bowl. In a medium bowl, whisk the flour, baking soda, baking powder, salt, and pumpkin pie spice together. In a separate bowl, beat the butter and brown sugar together on high speed for 1 minute and then add the egg and beat. Beat in the buttermilk on low speed. Then beat in the applesauce. Pour the flour mixture into the butter mixture and beat on low speed until well mixed. Spoon the cake batter into the crockpot. Place a dish towel over the pot and then top with the lid. Cook for 2.5 hours on high. Lift out the cake by the foil and serve.
