  • 3 tablespoons olive oil
  • 2lb beef stew meat, cubed
  • ½ cup cooked bacon, chopped
  • 1 onion, diced
  • 1 tomato, chopped
  • 4 cloves garlic, minced
  • 12oz light beer
  • 3½ cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1½ teaspoons sugar
  • ½ teaspoon paprika
  • 8 potatoes, quartered
  • 4 carrots, thickly sliced
  • 3 tablespoons flour
  • ¼ cup parsley, chopped
  • salt
  • pepper

Heat the oil in a large and deep pot on medium heat. Season the beef with salt and pepper and then brown the meat, cooking on both sides for about 5 minutes. Remove and set on plate to rest and cook the onions for 3 minutes in the same pot. Add the garlic and cook for 1 minute. Add the beer, broth and tomato paste and stir. Return the beef to the pot and simmer for 2½ hours, or until the beef is tender. Stir in the potatoes and carrots and simmer for 30-35 minutes, or until the veggies are tender. Remove 1 cup of liquid from the pot, whisk in the flour and pour back into the pot, mixing to combine well. Bring to a boil and reduce the heat to simmer for 10 minutes. Season if needed, add parsley, tomatoes and bacon. Stir and cook for an additional 2-3 minutes. Remove from heat and serve.
