  • 1 T. olive oil
  • 1 ½ red onions, diced and divided
  • 1 red chili, diced
  • 1 T. tomato paste
  • 2 C. diced tomatoes
  • 4 avocados, pitted
  • 1 Roma tomato, diced
  • ½ C. cilantro, chopped
  • 2 T. lime juice
  • Salt and pepper to taste

In a skillet, heat oil and sauté 1 onion until softened. Add in red chili and cook until softened. Transfer to a greased crockpot and mix in tomato paste and diced tomatoes. In a bowl, use a fork to mash and combine avocados, remaining onion, Roma tomato, cilantro, lime juice, salt, and pepper. Spoon on top of salsa, cover, and cook mixture for 1 hour.
