  • 1 T. sugar
  • 1 1/2 C. self-rising flour
  • 1/2 C. cornstarch
  • 3 tsp. seasoning salt
  • 2 tsp. paprika
  • 1/2 tsp. baking soda
  • 1/2 C. biscuit mix
  • 1 pkg. Italian salad dressing mix
  • 1 pkg. onion soup mix
  • 2 eggs, beaten with 1/4 C. cold water
  • 1 C. corn oil
  • 3 lb. chicken pieces

Preheat oven to 350°F and grease the inside of a large baking dish. Heat oil until hot in a large frying pan. In a large bowl, combine all dry ingredients. In another bowl, combine egg with 1/4-cup cold water. Dip each piece of chicken in egg and generously coat in dry ingredient mixture. Repeat twice. Place chicken in heated frying pan and cook until browned. Transfer chicken to prepared baking dish and cover with foil. Bake in oven for 45 minutes. Remove foil and bake for another five minutes. Let stand for five minutes before serving.
