Cider-Baked Sausages

These large sausages are big enough to make a meal.

Ingredients

  • 500 g. pork sausages, pricked
  • 3 cooking apples, peeled, cored and diced
  • 1 onion, peeled and sliced
  • 500 ml. medium- sweet cider

Directions

Place the sausages in an ovenproof dish. Add the apples, onion and cider. Bake in a moderate oven about 40 minutes, stirring occasionally. The cider and apples will reduce and provide a syrupy fruit sauce. Serve with new potatoes and a green salad. You may replace the apples with peeled, cored pears.
