• 3/4 C. apple cider or juice
• 2 sweet potatoes, peel and slice in thin discs
• 1/2 tsp. apple pie spice (cinnamon, nutmeg and cloves)

Preheat over to 350 degrees. Combine ingredients in covered glass baking dish. Bake for one hour or until tender. You can also cook this in the microwave- stop and stir while cooking and cook for 30-40 minutes. Yield: 4 servings.
