We had to include another seasonal glaze for your pork loin. This classic cider-glazed pork loin recipe will always be a great main course meal.

  • 1/2 C. sweet apple cider
  • 1/4 C. honey
  • 1/2 tsp. ground ginger
  • 1/2 tsp. dry mustard
  • 2 medium onions, chopped
  • 4 1/2 lb. pork loin roast
  • 3 medium tart apples, peeled and quartered

Preheat oven to 325 degrees. Pour cider into small pan. Bring to a boil over high heat and rapidly reduce by half. Remove from heat. Blend in honey, ginger and mustard. Place roast in a shallow roasting pan and surround with onions. Brush roast generously with about 1/3 of the cider mixture.Cover. Place in oven for about 1 1/2 hours to 2 1/2 hours. After roast has baked for about 1 hour, add apples next to onions. Brush roast with about half of remaining glaze. Uncover and brush remaining glaze during the last 15 to 30 minutes of baking. Pork roast is done when a thermometer inserted into thickest part registers 160 degrees. Transfer roast to a carving board or platter and carve into thin slices.
