  • 2 sticks butter, unsalted and softened
  • 1 C. brown sugar
  • ¼ C. vegetable oil
  • 2 tsp. vanilla extract
  • 2 large eggs
  • 1/3 C. applesauce
  • 3 C. flour
  • 1 T. ground cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. baking soda
  • Dash salt
  • 3 C. apples, diced
  • 1 C. caramel baking bits
  • 1 C. powdered sugar
  • ¼ C. apple cider
  • Caramel sauce

Preheat oven to 350 degrees. In a large bowl, beat together butter, brown sugar, and vegetable oil until light and fluffy. Add in eggs, vanilla, and applesauce. In a separate bowl, combine flour, cinnamon, nutmeg, baking soda, and salt. Pour flour mixture into batter and mix until well-incorporated. Fold in apples and caramel bits, making sure not to overwork the batter. Pour into a greased bundt pan and bake for an hour or until an inserted knife comes out clean. Mix together powdered sugar and apple cider to make icing and once cake has cooled and has been removed from the pan, drizzle icing and caramel sauce over top.
